With back to school time quickly approaching, I’m already planning ahead for the fall for what recipes I want to use for lunches and for after school snacks. This recipe is one of our favourites around here for an afternoon snack after school to give all of us that extra little bit of energy to get us through that tough hour before supper when we are all exhausted.
Here’s what you will need:
- 1 cup of rolled oats
- 1/2 cup of mini chocolate chips (optional)
- 1/3 cup of ground flax seed
- 1/2 cup of peanut butter (we use almond butter instead for a healthier option)
- 1/3 cup of honey
- 1/2 cup of craisins
- 1 teaspoon of vanilla extract
Combine all ingredients into a bowl. Form into balls using your hands. Arrange the energy balls onto a baking sheet and freeze or place into the fridge if you have longer amount of time before eating. If putting them in the freezer, allow to sit for about an hour. Enjoy!
